DIPLOMA IN PROFESSIONAL BAKERY AND PATISSERIE PROGRAM (3 MONTHS)

This is a comprehensive Certificate program in baking that is designed to teach each module in an elaborate manner with both practical and theoretical knowledge. This will help them to recreate recipes of pastries and desserts that are timeless and treasured.

The program is spread across 12 weeks with everyday classes from Monday to Friday From 10 am to 4 pm.

Bread baking is both an art and a science, requiring precision and an eye for detail. This class is designed to teach you the fundamental skills needed to craft beautiful and delicious bread, focusing on the entire process from start to finish. Whether you’re a complete beginner or have some baking experience, this course will help you perfect your techniques and understand the intricacies of dough making.

This course promises a rich, hands-on learning experience, equipping participants with the knowledge and skills to bake a variety of breads at home. The focus on both technical and creative aspects ensures that students leave with a deep appreciation for the craft of bread baking.

 

Breakfast is considered the most important meal of the day. It can be made colourful and delicious with the addition of beautiful pastries. Join us in mastering the techniques of making rich pastries that include rolling, kneading, filling and garnishing the pastries. Students will learn to make:

  • Donuts
  • Oatmeal and cranberry cookies
  • Pesto rolls
  • Banana walnut whole wheat muffins
  • Chelsea buns
  • Hazelnut Chocolate babka

This module is designed to train students to create visually appealing pies and tarts, ranging from sweet fruit-filled pies to savoury vegetable and cheese-filled quiches.

Throughout the course, students will learn the fundamental techniques for making perfect pie crusts and tart shells, as well as how to fill them with a variety of delicious fillings. They will also learn how to decorate their pies and tarts using various pastry techniques, such as lattice tops, decorative edges, and intricate cut-outs.

Puff pastry with sweet and savoury variations

Chocolates are a crowd-favourite delicacy. Everyone loves chocolate, but not everyone is skilled at working with it. This course will show students the basics of working with chocolate, whether it is baking chocolate for use in cakes, or making truffles with fillings. Students will learn how to make confectionaries such as:

  • Apricot/ any fruit pate de fruit, Truffles 
  • Bon Bons with Peanut Butter 
  • Crunchy Caramel 
  • Fruit Preserves and Dry Fruits/Nuts

We’ll start by teaching you the basic techniques of French pastry making, including making dough, piping techniques, and baking. From there, we will move on to the specific recipes, starting with the Classic Opera cake, Choux , Eclairs, Paris Brest and more.

Signature cakes  includes, Tiramisu revisited, New York cheesecake, Swiss rolls and variations

Bread making class was amazing, focused on every small details, hands on. Practice, detailed brochure, and also we made notes with chef on all steps so we can remember well, i am sure when i will make at home it will turn greatOne only small request will be to get a maid’s help for cleaning dishes, at the end of long class washing dishes by our own is not fun at all.

My daughter had an amazing experience in learning to bake cakes from scratch. I enrolled her in 4 days workshop as her summer holidays were going on. They teach from the very basics and u don't need to have any prior knowledge.

Teacher is so sweet. My daughter enjoyed the classes where she learnt brownies , pizza, cupcakes, red velvet cake and cake decor. Particularly red velvet cake and pizza tasted awesome. I attended a two day Sourdough bread baking class this week, and can confidently say it was a great experience. Chef Vidushi has good knowhow about the subject and took me through the practical aspects first followed by theory so understanding could be enhanced. It was also great interacting with Chef Shobha as well, who helped clarify some aspects I was keen to understand.Overall a very friendly atmosphere and the chefs take the time to help students understand the nuances of baking.Would love to explore more courses here in the future. The weekend class on CAKES AND PASTRIES was really great and beginner friendly. Class starts out with a theory session followed by practical which I found to be really efficient way of teaching. They took care of teaching the students every minute detail, Do’s and Don’ts, tricks and tips, etc. In practical session, we were not just shown demos of making cakes, but also were given hands on experience. I had attended 1week training program. Excellent mentor! The issues what we face during the baking was very well explained technically . So many dishes were covered in one week. I'm so happy and a contented student. Shobha and Shyama ma'am were so kind and taught patiently.Though i travelled very far to attend the training....at the end i felt it was worth it.The recipes what i try from the cls was distributed to my friends and college students to get the feed back...everyone liked it a lot. Hailing from a family with experience in multiple dimensions of hospitality industry, she started dabbling in baking quite by accident. Is it online or offline program?

We offer both Online and offline baking program. All the details like date, duration and fees will be published in our website, from time to time. Offline classes will happen in our Academy space located in Whitefield, Bangalore.

Do you provide any placement assistance?

Yes we do assist in placement. They will be placed either in stand-alone bakery or well know restaurant or patisserie. Placement is based on student’s credentials. It will be a paid internship.

What is the duration of the program ?

We have short term, Long term and weekend programs. Weekend program are for hobby baker and working professionals. While long term is suitable for people looking for career opportunities like Pastry chef job in hotel industry.

Do you provide any certificate after training?

Yes. We provide certificate after training recognised by NCVTE, associated with HRD, Ministry of India along with our certificate for all the long-term program. We also provide to weekend program students.

I am a beginner. Do I need to have prior knowledge about baking?

Prior knowledge about baking is not necessary, as we take lot of theory classes along with practical. Students can just walk-in as all the materials and tools needed will be provided by us.
