Planning the Perfect Wedding Cake: Top Tips

Baking a wedding cake is a special experience, but it can also be a very challenging task. As a baker, you may be planning to make your own wedding cake or have been requested to make one. With proper planning, you can alleviate stress and create a memorable cake. By considering factors such as cake design, flavours, and structure, you can ensure the cake is both beautiful and delicious. Follow the tips below, and consider joining Celesteyum’s wedding cake making course to learn these tips in detail!
Planning is Key
Before starting, determine the number of guests to figure out how many tiers you will need. Also consider the theme, flavours, and decorations. You can use a cake size guide to help you estimate. Different sized tiers can be combined in many different ways. This creates a lot of flexibility in the number of servings a tiered cake can have.
Also take into account the location of the wedding, time of year (to determine how hot or cold the weather will be), how accessible the venue is and any wedding theme to keep in mind. Keeping these things in mind will help you plan your activities for the day of the wedding better.
Practice Makes Perfect
Select a trustworthy cake recipe and test bake it beforehand. This ensures the design is doable and the cake turns out as expected. If you don’t have a lot of experience with tiered cakes, you may want to make a smaller practice cake before the big day. Do a test run with the cake flavours and frosting you plan to use. Practice makes perfect!
Edible Art
Plan your cake’s design, and if you are not confident using sugar paste or making buttercream flowers which require skill and time, consider using fresh, real flowers which are an easy and beautiful way to decorate a wedding cake. It is suggested to pick a cake design you feel confident making, and that you know you can execute well.

Structure
If you are planning on having a tiered wedding cake with the tiers stacked on top of each other then you will need to consider a structure to keep the cakes upright. This could simply be a thin cake board under each cake and cake dowels inserted in the center of each sponge to act as a platform to support the weight of your cakes. If you are having a fruit cake layer it is worth considering having this as your largest layer as this will be at the bottom of the cakes and will help manage the sturdiness of the cake. Our wedding cake making courses cover these basics in detail.
Keep It Simple
Pick the couple’s favourite flavour to add a personal touch, and to keep things simple, avoid using more than two flavours for your wedding cake. Also, use a frosting you feel comfortable making and decorating with. You can enhance the visual of the cake by adding more edible art instead of using too many contrasting flavours. These tips are covered in our wedding cake course.
Advance Preparation
Did you know that you can freeze cakes? The days running up to the big day are going to be pretty busy and stressful so to alleviate some of the pressure, you can bake your cakes in advance and store them in your freezer. Cake layers and buttercream can be made weeks ahead of time and frozen properly. Breaking up the workload also makes the process a lot more enjoyable. It allows you to take a breather between all the baking, and focus on the decoration of the cake.
By following these tips, you’ll be well on your way to creating a beautiful and delicious wedding cake. Whether you’re a professional baker or a passionate home cook, understanding these key considerations will help you approach the process with confidence.
